Tomato Basil Soup

ingredients

100 oz can of diced tomatoes

1 large red pepper (diced small)

1 medium onion (diced small)

2 Tbls. minced garlic

2 bunches fresh basil (chopped)

1/2 cup white win

1/4 cup sugar

salt & pepper (to taste)

2 cups 35% cream

1/4 cup butter

 

method

 

Place first 8 ingredients in a soup pot and bring to a boil. Reduce heat and simmer for about an hour.

Add cream slowly stirring constantly. Bring back up to a simmer, remove from heat and add butter while puréeing with a wand mixer.
