Ingredients
4 fish fillets (cod or haddock)
enough oil for frying (enough to fill a large pot 3/4 full)
1 cup of flour (plus flour for dredging fish)
1 tsp. baking powder
1 tbl. sugar
1/2 tsp. salt
1 egg
1 cup beer
4 large potatoes cut in wedges
1/2 cup of oil (corn, olive,veg. etc.)
2 tbls. minced garlic
2 tbls. chopped parsley
Method
Mix in a large bowl, oil, garlic, and parsley. Then add potatoe wedges and coat.
Place potatoes on cookie sheet and place in a preheated 424 degree oven.
Bake until potatoes are tender.
While your wedges are cooking mix together flour, baking powder, sugar and salt.
Then separate egg and add yoke to beer and blend.
Then whisk beer into flour mixture and beat till smooth. Beat egg white till stiff and whisk into batter.
Now dredge fish in flour and dip into batter.
Dip fish in hot oil holding it till fish begins to float. Fry until golden brown.
Serve with potatoes wedges.
